No Ordinary Pie in the Sky
National Pie Day is celebrated on December 1, 2022, and it’s the perfect time for us to introduce our holiday menu which includes classic pie desserts. Bex Kitchen features Chocolate Crème and Coconut Crème Pie on the newly released holiday-inspired catering menu for all to enjoy. These two pies are seasonal favorites as traditional fruit (such as peaches or berries) were not available at this time of year, however coconut, nuts, and chocolate are plentiful in the pantry. The origins of adding the Chocolate Crème Pie to the holiday menu is also a bit of a nostalgic throwback to Chef Becky’s childhood memories around Christmas time, as her mother always made this a special family treat. There is also the connection to Chef’s earlier days when she worked as a pastry chef and utilized all local and fresh ingredients like she still does today at Bex.
Bex Kitchen pies are not your ordinary pie and start with a very important flaky crust, prepared uniquely, in a brioche tart pan. The brioche pan is taller than a regular pie pan, which not only provides a more elegant presentation, it produces a slice of pie that is perfectly balanced, as the deeper pan allows for a more pudding-to-crust ratio. The chocolate cream pie starts with a chocolate crust then a homemade silky smooth pudding is added that then gets topped with fresh whipped cream. The coconut crème pie begins with a fresh-made macadamia nut crust then the coconut crème filling is added and topped with toasted coconut. Both pies are built with a combination of flavors layered throughout the process ensuring they are prominent in all of the finished pieces. This technique stays true to Bex Kitchen’s guiding principle “it’s all about the bite”, meaning that you will enjoy all the taste and flavors of the dish in a single bite, and bite after bite.
