A Look Back and Forward 

butternut squash lasagnaThe folks at Pitchfork, that avant-elite magazine of hipster kinds of music, got very into lists at one point. 

It sort of rubbed off on the world. A new word, the “listicle” was even born: a portmanteau of list and article. Here at Bex, we got inspired to reminisce on a Top Five Bex Dishes, which – Lord willin’ and the creek don’t rise – will continue to be offered going into 2024 and beyond. See what we came up with, and we’d love to hear from you about your Bex favorites.  Ranking does not signify importance, because eating is both a subjective and communal experience. Lists are not authoritative, just conversation starters. 

 

  1. The salami Bex served on the Charcuterie Board at the closing reception for Julie Goetz’s “Wild Life” exhibit, curated again expertly by Chef Becky’s Executive Assistant Chris Callahan. Chris McNally, Assistant Chef at Bex, said “It’s an exceptional salami– more creamy, nuanced, and elevated than your average supermarket salami.” Chef Becky: “It’s Rosette de Lyon salami, a pork salami in the French style, and it’s fermented so it’s good for your gut.” Bex Charcuterie Boards highlight our innovative culinary nuances and are always in harmony with the seasons. Spring may feature a goat’s milk cheese whereas winter may include a hearty Stilton to reflect the flavors of that period and to compliment our seasonal menu. 

 

2. Butternut Squash Lasagna. The Chef uses bechamel cream instead of ricotta, seasoned with rosemary and sometimes sage. The squash’s fall flavor palette and the warmth of hearty pasta make this dish a winner. This dish lingers on your mind for days after you enjoy it. The creaminess of the bechamel and the butternut squash pair perfectly and bring an elevated comfort food to your table for any occasion. 

 

3. Turkey Roulade. A versatile dish for Thanksgiving, Christmas, New Year’s, or pretty much any occasion, a slice of this super-tender double-meat dish gives you a blast of both turkey and the sausage stuffed in the core. Dried fruit notes add to this dish perfectly without making it overly complex. Bex starts the turkeys four days in advance in a brining process, so this dish exemplifies how much time and prep work she and her staff put into food. 

 

4. Huevos Rancheros at the Bex Cafe. Sometimes people complain about food that is too “arty” and not hearty enough, but Bex’s Huevos Rancheros will fill you up and fuel you for the day. Chef Becky trained with Diana Kennedy, a leading authority on the various regions of Mexican cuisine. 

 

5. Bex Roast coffee from Black River Roasters. Specially roasted for Bex from Colombian and Mexican sources, it’s complex in the way that good wine or beer or chocolate can be. You’ll hit notes of chocolate, vanilla, and earthy cherry. Available at the Bex Grab & Go section of the Cafe. It’s strong but clean, and a great way to beat the winter blues.
